Tucked in an old brick building with large street facing windows is a classy little restaurant that promotes a healthy lifestyle through good eating. The chef owned Santé Restaurant is dedicated to offering organic ingredients and naturally raised products prepared with traditional European techniques. Along with the restaurant is a commitment to the almost lost art of Charcuterie, the European style of house curing meats.

With a “Eat globally, act locally” mandate this gem of a restaurant focuses on the multitude of culinary resources offered in the Inland Northwest. Add a nice Southern European flair to the food, service that is friendly and appropriately attentive and you wind up with a very satisfying dining experience.

Santé is vying for best downtown breakfast place and winning with dishes like its Crispelle, a goat cheese stuffed crepe and its Aztec Eggs with tomatillo salsa, housemade Chorizo then served in its own cast iron skillet. Try the Wild Mushroom omelet, French Toast with a house cinnamon anise syrup or unique Tofu Wellington. Nice rich coffee or an espresso rounds out the morning.

Lunch offerings include a Snake River Kobe Hamburger with homemade condiments or try the “Butchers Board” with its three types of house-cured meat (Proscuitto, Hot Capricola, Italian dry Salami) homemade mustard and ketchup, and a few slices of baguette. Delectable soups and salads round out the menu.

Weekend dinners create a difficult choice between a succulent New York Steak artfully cooked, Free Range Chicken in a reduction sauce or perhaps a juicy Pork Loin in Caul. Save room for the sweet of the day or French vanilla ice cream or Chocolate Sachertorte with Basil Ice Cream. A nice wine list with ample fills complements every meal in European style.

The Charcuterie items are available for patrons wanting to leave with more than a doggie bag. Take home some duck prosciutto, smoked bacon or Gravalax (sea salt and dill cured salmon).

Attention to detail (even environmentally-friendly cookware) and good taste will make you want to raise your glass in a Salute to Santé and many return visits!
